A listener’s tip (he says he tried sending it to JCD himself before the show existed): a small folding paring knife, made since the late 1800s by French knifemakers, that folds flat enough to carry in an apron pocket without risking a cut. Based on the details given — the “number 8” size being the ideal paring size, the carbon-vs-stainless tradeoff — this is almost certainly the Opinel No. 8 “Savoyard,” one of the most recognizable folding knives in the world, still made in the Savoie region of France it’s named for. Carbon steel holds an edge better; stainless is lower-maintenance if you’re not cleaning it right after every use. Runs about $20.
