Merguez sausages

Adam finally got around to cooking up some Merguez sausage after talking about them earlier with John. Adam procured them from  the “frog man” at the Austin Farmer’s Market and proceeded to blow them up while cooking them. Adam described the mess as looking like a gunshot wound – not pretty! John recommended boiling first to firm them up – then grill’em!

Merguez is a fresh sausage made with lambbeef, or a mixture stuffed into a lamb-intestine casing. It is heavily spiced with chili pepper or harissa, which gives it its characteristic piquancy and red color, as well as other spices such as sumacfennel, and garlic.
